A perfect Christmas mess. A bright, bold, and easy to assemble salad.
Ingredients:
4 Sweet potato
100g Black rice
100g Feta
2 Tomatoes
1 tsp pomegranate molases.
1 Lemon
1tsp Dried chilli
3 tbsp Olive oil
Handful of chopped parsley
Radishes
Salt and pepper
Handful of herbs (Oregano/ basil/ thyme)
Method: Roast sweet potatoes whole for one hour. Blend herbs, olive oil, lemon juice, pomegranate molasses, dried chilli. De-seed and finely dice tomatoes, then mix with herb oil to make salsa. Boil black rice for 20 minutes. Squeeze out sweet potatoes from skin onto a platter. Top with black rice, feta, salsa and finely sliced radish (use a mandolin for best results).
