Ingredients
Filo pastry (4 sheets)
1 butternut squash
100g goats cheese
50g toasted pumpkin seeds
50g miso paste
200g parmesan
Herbs: sage, parsley
4 tbsp of melted Butter
(vegan for vegan canapes)
Method
Preheat your oven to 190°c.
Brush each layer of filo pastry with melted butter adding the next on top and so on. Cut the final pastry layers into squares to fit your mini cupcake molds. Place carefully into each. Bake for about 10 minutes or until lightly golden.
In the meantime, peel, cut, season and roast your squash at 190°c. Crumble goat cheese in the filo tarts. Add the squash with chopped sage then miso pesto (see ingredients below). Sprinkle with green parmesan crumb (see ingredients below).
