Ingredients
110g dates
110g oats
60g coconut chips
60g pumpkin seeds
110g prunes (stoned)
70g coconut butter
Optional flavours (and extra health benefit) add:
Cardamom
Cinnamon
Ginger
Method
Place all the above into a food processor, don’t over blend, retain some texture.
Take small handfuls and squish them together and roll until you either form a ball or a bar.
Each 20g of mixture is around 90 calories, (1 ball) is enough to keep blood sugar levels steady.
‘Set’ the balls in the fridge and store in containers for up to 2 months.
