(feeds several for a snack)
INGREDIENTS
1 mackerel fillet (tin)
½ lemon or lime
12 fresh chives
2 tbsp. sour cream/Greek natural yoghurt/
soya yoghurt
METHOD
Squeeze the lemon/lime to remove the juice.
Flake the mackerel using a fork into a mixing bowl (check for bones).
Cut the chives using scissors.
Mix the chives, lemon/lime juice and cream
(or yoghurt if using) with the mackerel.
Mix thoroughly.
Spoon into your serving bowl.
Serve with oat cakes, carrot sticks, cucumber sticks and/or celery.
