A number of years ago, the mother of a Finns chef sent her an email. It read ‘Hi Darling, Granola’, followed by a recipe. That was all.
A hybrid of her recipe, Finns granola is for darling daughters everywhere.
Serve with a dollop of yoghurt and fresh, seasonal fruit for a great start to the school day.
350g oats
50g desiccated coconut
80ml vegetable oil
100ml runny honey
80g sesame seeds
80g chopped apricots
80g dried cranberries
80g pecan nuts
80g sunflower seeds
80g pumpkin seeds
80g linseeds
METHOD
Pre-heat the oven to 180°C.
In a large bowl, mix the oats, coconut, oil and honey.
Place the mixture in a large baking tray and bake for about 25 minutes or until golden and crunchy, stirring the mixture twice during baking.
Add the seeds, nuts, chopped apricots and dried cranberries to the mixture.
Allow to cool completely before storing in
airtight containers for up to 2 months.
